Going bananas over bread!


Who doesn't love a good banana bread? I haven't met many people that don't like it, but of course there will be  some who don't care for it; and I'm okay with that!.  Anyhow I know you will enjoy this recipe it's super easy and quick to make. Which is imperative to me because having 3 kids all under the age of 6 means you have quick intervals to get things done!. I actually got this recipe off the food network but altered it a bit for time saving sake.  Tell me what your thoughts are after you have made it and tried it! Happy eating!



Ingredients:

2 very ripe Bananas but if you like a more dense bread add 3 bananas instead

1 Cup of granulated sugar

2 eggs

1 tbs. milk

1tsp. round cinnamon

2 cups of Pillsbury flour (all purpose)

1 tsp baking powder

1 teaspoon baking soda

1 tsp salt.

Mix all ingredients in one bowl and mix with a hand mixer until dough is thick.  Be sure that you smash the bananas first before using hand mixer for hassle free mixing.  Transfer mixed dough to a  buttered or cooking sprayed loaf pan or a 9x5x3 pan.  Bake at 325 degrees let cook for about 1hr and 10 minutes.  Check periodically by sticking a toothpick in the center of the bread.  Once toothpick comes out clean the bread is cooked!!.


Mini Meatball sliders with a home made gravy



I don't know about you guys, but I know that there is a huge debate amongst the world whether to say sauce or gravy.  Now I'm from an Italian family and in our family it's called gravy.  Not the kind of gravy that you have on Thanksgiving with your Turkey.  But the kind of gravy that you slather all over meatballs, and pasta, and dunk huge pieces of Italian bread into gravy.  Anyhow hope you like this one made this for the kids for lunch today.  Enjoy!


Ingredients:

About 20 mini frozen meatballs (any brand)

Slider bread (Pepperidge farm is the best!)

Gravy:

2) 29 ounce cans of Hunts sauce

2 ripe tomatoes chop and add into sauce

2 cloves of garlic minced

1/4 tsp of nutmeg (freshly grated preferred)

1/2 large sweet onion

Any Italian seasoning to taste

Salt and pepper to taste

simmer on medium low heat

add meatballs to gravy and wait about 20 minutes until warmed through

Putting it all together:

Put one meatball on each slider

add your favorite pre-shredded mozzarella cheese on top.

stick under low heat broiler until cheese is melted and bread is toasty.

Eat and enjoy!


Not so apple pie




So this morning we were in a breakfast rut and I really wanted to make the kids something simple becuase of course it was 6 a.m wake up call for them.  So I decided to make this not so apple pie snack for them so I could at least get one cup of coffee down the hatch needless to say with them munching on this I was able to get 2 cups in Score!!! I hope you enjoy it as much as they did!

Ingredients

2 Gala apples (or any on hand apples)

1/4 cup of walnuts

1/4 cup of milk chocolate chips

and a drizzle of caramel sauce
